Balsamic Roasted Grape & Feta Thyme Whip Crostini

We asked our friends at Côte Catering to craft the perfect canapé for a refined wedding or sophisticated event, and they responded with a bite-sized masterpiece: the Balsamic Roasted Grape and Feta Thyme Whip Crostini. Marrying the rich sweetness of oven-roasted grapes with the savoury tang of whipped feta and fragrant thyme, this beautifully balanced hors d’oeuvre is as visually elegant as it is irresistibly moreish. A harmonious blend of texture and flavour, it’s the kind of detail that elevates any gathering from memorable to unforgettable.

Ingredients

For the Garlic Crostini

– 1 French bread stick

– Olive oil

– 1 garlic clove, halved

For the Roasted Grapes

– 2 red grapes per crostini

– A splash of balsamic vinegar

– A drizzle of olive oil

For the Thyme & Feta Whip

– 400g feta

– 2 tablespoons fresh thyme leaves

For Assembly

– Runny honey

– Fresh thyme sprigs for garnish

Method

Prepare the Garlic Crostini: Preheat your oven to 350°F (180 °C). Slice the French bread stick into rounds and arrange on a baking tray. Lightly brush both sides with olive oil and bake for 8-10 minutes, flipping halfway through. Once golden and crispy, rub each slice with the halved garlic clove while it is still warm.

Make the Thyme & Feta Whip: In a food processor, blend half of the feta until smooth. Add the remaining feta and thyme leaves, mixing until creamy. Transfer to a piping bag (or use a ziplock bag or a spoon).

Roast the Grapes: Preheat your oven, if necessary. Place the grapes on a baking tray, drizzle with olive oil, and add a splash of balsamic vinegar. Roast for 10-12 minutes until soft but plump.

Assemble: Pipe or spoon the thyme and feta whip onto each garlic crostini. Top with two roasted grapes, drizzle with honey, and garnish with fresh thyme.
