William – We first met on a group trip to New Orleans with a bunch of Australians. It was a weekend filled with fried chicken, jazz music, lots of drinks and fun.

Georgina – The relationship progressed pretty quickly after that trip. Will took me on a date once we were both back home in New York to relive our weekend in Louisiana.

He put in a lot of effort, scouting the best jazz bars and fried chicken establishments that NYC had to offer. He continued to woo me with fun and exciting dates, which then led to more group trips and holidays away. We moved from New York back to Sydney a couple of years ago. Our favourite thing is to travel to new places and experience fantastic restaurants.

We just got back from our honeymoon in New York, Italy and Greece, and our next trip will be to Japan in 2024. The minute we got engaged, we knew we wanted our wedding to pay homage to our time in New York. It was really important for us to fuse old-world glamour, elegance and romance with elements of modern, moody and almost underground party vibes, drawing from Studio 54, large New York warehouse restaurants, and piano bars.

William – Food and alcohol were the biggest priorities for us. Our choice of venue was very easy. My mum is from Hong Kong, and I grew up spending summers there, eating the best dim sum with my family, a tradition I’ve carried through to my relationship with George.

Georgina – Mr Wong has been a favourite restaurant of mine since it opened. We knew we would have the best food, drinks and service from the Merivale team. We were lucky enough to have executive chef Dan Hong design the most incredible menu, including caviar, lobster noodles and, of course, individual dim sum platters.

For my gown, I was so lucky to work with Jess and her team at J. Andreatta to custom-design my dream dress. They were easy to work with and so accommodating. I wanted sleeves on my dress, and to look and feel like myself on the day. I opted for a silk crepe with a neckline inspired by Valentino’s 2022 collection, which emphasised architectural shapes and structured bows.

William – Our wedding was a black-tie affair, and I wanted to wear a cream dinner jacket to take it up a notch. P Johnson did an amazing job designing a bespoke jacket for me, with unique elements like the gold buttons, lapel size and fit. The fabric was sourced from Italy, where it was made, and it fit me like a glove.
